Scallion Oil Shredded Chicken Drumsticks
Ingredients
- 4 chicken drumsticks
- as needed scallions, ginger, garlic
- 2 tbsp cooking wine
- 1 onion
- 3 tbsp light soy sauce
- half tbsp oyster sauce
- a little salt and sugar
- 1 tbsp white sesame seeds
Instructions
- Wash the drumsticks. Place in cold water with cooking wine, ginger slices, and scallion segments. Bring to a boil, skim the foam, and continue cooking for 20 minutes. Let sit covered for 10 minutes, then transfer to cold water for 5 minutes. Shred into large pieces and set aside. To make scallion oil: heat oil, add sliced onion, large scallion segments, garlic, and ginger slices. Fry over medium-low heat until golden brown, then remove the solids — the scallion oil is ready!
- In a bowl, combine 2 tbsp sesame seeds, half tbsp oyster sauce, 3 tbsp light soy sauce, a little salt and sugar, and 4 tbsp scallion oil. Mix well and pour over the shredded chicken. Toss to coat, sprinkle with chopped scallions, and it's ready to eat!
