Scallion Sauce Pork Steak
Ingredients
- 600 pork collar (plum meat)
- 20 ginger slices
- 0.5 white pepper powder
- 15 oyster sauce
- 15 light soy sauce
- 1 egg
- 8 cornstarch
- 100 scallions (chopped)
- 25 minced garlic
- 12 toasted white sesame seeds
- 3.5 salt
- 8 caster sugar
- 1 cracked black pepper
- 35 peanut oil
- 5 sesame oil
Instructions
- Rinse the pork collar and pound both sides with the back of a knife to tenderize and loosen the muscle fibers.
- Place in a bowl, add ginger slices, white pepper, oyster sauce, light soy sauce, egg, and cornstarch. Mix well to coat evenly.
- Cover with plastic wrap and refrigerate to marinate for at least 30 minutes.
- Wash the scallions and finely chop them. Mince the garlic and set aside.
- Make the scallion sauce: combine chopped scallions with minced garlic, toasted white sesame seeds, salt, caster sugar, cracked black pepper, peanut oil, and sesame oil. Mix well and set aside.
- Heat a pan with a little cooking oil over high heat. Sear the marinated pork collar until both sides are golden brown.
- Use kitchen shears to cut the pork into bite-sized pieces, then sear the surfaces until golden.
- Spoon the scallion sauce over the seared pork pieces.
- Spritz a little water into the pan, cover with a lid, and simmer over medium-low heat for 2 more minutes. Serve and enjoy!
