Spicy Diced Chicken (La Zi Ji Ding)
Ingredients
- 6 Chicken wing mid-joints
- 1 Sichuan peppercorns
- to taste Dried chili peppers
- 1 Peanuts
- 1 White sesame seeds
- 2 Ginger
- 2 Garlic
- 2 Sugar
- ½ Cooking wine
- 1 Light soy sauce
- 1 Five-spice powder
- 1 Salt
Instructions
- Cut the chicken wings into small pieces, rinse clean, and pat dry.
- Mince the garlic and ginger; set aside. Measure 1 tablespoon Sichuan peppercorns and dried chili peppers into a bowl.
- Add minced ginger, ½ tbsp cooking wine, 1 tbsp light soy sauce, 1 tsp salt, and 1 tsp five-spice powder to the chicken. Mix well and refrigerate to marinate for at least 30 minutes.
- Heat oil to about 160°C (320°F). Add the chicken pieces and deep-fry over medium heat until golden. Remove and drain. (Optional: fry the peanuts in the same oil if desired.)
- Leave a thin layer of oil in the wok. Add minced garlic, Sichuan peppercorns, and dried chili peppers. Stir-fry gently over low heat until fragrant.
- Add the fried chicken, peanuts, 1 tsp salt, 2 tsp sugar, and white sesame seeds. Toss everything together until well combined.
