Easy Spicy Stir-Fried Pork with Green Beans
Ingredients
- 600 Long beans (yardlong beans)
- 300 Pork (half fat, half lean)
- 3 Light soy sauce
- 3 Cooking wine
- 0.5 Sugar
- 0.5 Oyster sauce
- 1 Dark soy sauce
- 5 Bird's eye chili (Thai chili)
- 6 Garlic cloves
- 1 Cornstarch
Instructions
- Use half-fat, half-lean ground pork. Marinate with 1 tbsp cooking wine, 1 tbsp light soy sauce, 0.5 tbsp oyster sauce, 0.5 tbsp sugar, and 1 tbsp cornstarch for about 10 minutes. (Alternatively, you can skip marinating and season more heavily later.)
- Heat oil in a wok and stir-fry the marinated pork until it releases some fat and turns slightly crispy. Remove and set aside.
- Using the rendered pork fat, add a bit more oil if needed. Add chopped bird's eye chilies and minced garlic, stir-fry until fragrant. Add the cleaned and diced long beans. Stir-fry over high heat. Pour 2 tbsp cooking wine and 2 tbsp soy sauce around the edges of the wok to deglaze. When the moisture dries up, add 2-3 tbsp water immediately. Continue stir-frying over high heat for about 5 minutes, adding water as needed during this time.
- Add the cooked pork back to the wok and stir-fry together for 2-3 minutes. Add 0.5 tbsp dark soy sauce for color and 1 tsp salt to taste. Serve immediately.
- A perfect dish to serve with rice!
