Steamed Spare Ribs with Black Bean Sauce

  • 0.5 tbsp fermented black beans (douchi)
  • 1 potato

  1. Prepare 500g pork spare ribs. Add 1 tbsp flour and water to the chopped ribs, then repeatedly scrub and rinse for 2 minutes to draw out blood and impurities. Rinse several more times with clean water — this ensures the steamed ribs won't have any gamy smell.
  2. In a bowl, combine 2 tbsp minced garlic and a small half-spoonful of fermented black beans. Pour hot oil over them to release their aroma. Season with 2 tbsp light soy sauce, 1 tbsp oyster sauce, a pinch of salt, and a little sugar.
  3. Mix well, then pour the sauce over the ribs. Add 1 tbsp cornstarch and toss everything together evenly. Marinate for about 30 minutes.
  4. Line the bottom of a steaming plate with sliced potato.
  5. Once the water is boiling, place the plate in the steamer and steam for 25 minutes.
  6. So fragrant! The ribs come out tender and silky smooth.
