Stir-fried Beef with Celery
Ingredients
- 500 beef
- 100 celery
- oyster sauce
- white pepper
- a little egg white
- a thin coating cornstarch
- ginger
- peanut oil
- garlic (minced)
- small chili peppers
- salt
- chicken bouillon
- chili powder
- 1 light soy sauce
Instructions
- Marinate the beef: 1) Slice the beef against the grain (this is important!). 2) Add oyster sauce, white pepper, a little egg white, and a thin coating of cornstarch. Add julienned ginger if you like. Mix well by hand. 3) The most important step — seal with oil! Drizzle a little peanut oil and mix again. This locks in the beef's moisture. Marinate for 30 minutes to let the flavors develop.
- Heat wok until hot, then add oil. Add the marinated beef and quickly toss to separate the pieces. The shorter the cooking time, the more tender the beef! Stir-fry until about 80-90% done, then remove and set aside.
- Leave the residual oil in the wok. Add minced garlic and small chili peppers, stir until fragrant. Return the celery and beef to the wok, toss together. Season with a pinch of salt, chicken bouillon, chili powder, and 1 tablespoon of light soy sauce. Stir-fry over high heat for 7-8 tosses and serve immediately.
