A delicious Stir-Fried Beef with Dried Chilies recipe.

Soak the dried chilies in hot water until softened, then drain well before cooking.
Finely julienne scallions and ginger, add Shaoxing wine, and squeeze firmly to extract the juices. Slice the beef thinly, then add the scallion-ginger juice, a pinch of salt, and black pepper. Massage into the beef. Add about 1g baking soda and mix well. Finally, coat with a little oil and set aside.
Heat a wok over high heat with oil until smoking. Add scallions and stir until fragrant. Add the marinated beef and stir-fry until it changes color. Add the drained dried chilies and toss until aromatic. Add the garlic and stir briefly. Season with 1 spoonful soy sauce, oyster sauce to taste, MSG or seasoning, and beef bouillon powder. Add a pinch of sugar to enhance the flavor, then a splash of dark soy sauce for color. Toss everything together, then add 1 ladle of water and let it simmer briefly to bring out more aroma.
