Stir-Fried Cabbage with Glass Noodles and Egg — Foolproof & Delicious
Ingredients
- 1/2 head Cabbage
- 2 bundles Glass noodles (vermicelli)
- 4 Eggs
- a pinch Scallions (chopped)
- to taste Light soy sauce
- to taste Dark soy sauce
- to taste Oyster sauce
- to taste Salt
- as needed Cooking oil
Instructions
- Soak the glass noodles in warm water until soft, then drain. Toss with a little cooking oil and dark soy sauce — this prevents sticking and adds flavor.
- Heat a wok with cold oil. Crack in the eggs and scramble until golden. Add the chopped scallions and stir until fragrant.
- Add the sliced cabbage and stir-fry over high heat until it softens and is just cooked through.
- Toss in the glass noodles. Season with light soy sauce, oyster sauce, and a pinch of salt. Stir-fry quickly and evenly.
- Add minced garlic, give everything a final toss, and it’s ready to serve.
