Stir-fried Pork with Velvet Pioppini Mushrooms

Ingredients

Instructions

  1. Choose whole, intact velvet pioppini mushrooms like these.
  2. Soak in cold water for 30 minutes.
  3. Stir-fry the pork belly until the fat renders out.
  4. Add bird’s eye chilies and garlic, stir until fragrant.
  5. Add the soaked mushrooms and stir-fry over high heat. Season with salt, light soy sauce, dark soy sauce, and the white stems of the garlic sprouts. Toss evenly.
  6. Add a splash of water and let it braise briefly. Finish with chili powder and the green garlic sprout leaves.
  7. Plate and serve — it’s really delicious!
