Stir-fried Pork with Velvet Pioppini Mushrooms
Ingredients
- as needed pork belly
- as needed velvet pioppini mushrooms (dried)
- as needed garlic cloves
- as needed garlic sprouts
- as needed salt
- as needed light soy sauce
- as needed dark soy sauce
- as needed chili powder
Instructions
- Choose whole, intact velvet pioppini mushrooms like these.
- Soak in cold water for 30 minutes.
- Stir-fry the pork belly until the fat renders out.
- Add bird’s eye chilies and garlic, stir until fragrant.
- Add the soaked mushrooms and stir-fry over high heat. Season with salt, light soy sauce, dark soy sauce, and the white stems of the garlic sprouts. Toss evenly.
- Add a splash of water and let it braise briefly. Finish with chili powder and the green garlic sprout leaves.
- Plate and serve — it’s really delicious!
