A delicious Thai Basil Pork Rice (Pad Krapow) recipe.

Cut a handful of green beans into pieces about one finger-joint long. Slice 4 bird’s eye chilies into rings (omit if you don’t like spice). Mince 4 cloves of garlic. Prepare 1 handful of Thai basil leaves (or regular basil/holy basil) and 150g ground pork.

Mix 1 tbsp light soy sauce, 1 tbsp cooking wine, 1 tbsp oyster sauce, 1 tbsp fish sauce (if no fish sauce, substitute with an extra tbsp of soy sauce), and 1/3 tbsp sugar to make the sauce.

Heat 2 tbsp cooking oil in a wok over high heat. Add the green beans and stir-fry for about 1.5 minutes until just tender. Add the minced garlic and chili rings, stir until fragrant.

Add the ground pork and stir-fry until it changes color. Pour in the sauce and toss everything together evenly. Add the Thai basil leaves, stir well, then turn off the heat.
