Three-Fresh Mushroom Soup
Ingredients
- 200g fresh shrimp
- 3 eggs
- 150g soft tofu
- 150g seafood mushrooms
- 4 shiitake mushrooms
- 1 tsp chopped scallions
- 5g salt
- 2g pepper
- 2 tbsp vegetable oil
Instructions
- Prepare all ingredients: fresh shrimp, seafood mushrooms, shiitake mushrooms, eggs, and silken tofu.
- Heat olive oil in a wok and add shrimp heads. Stir-fry until red oil is released.
- Pour in 1200ml hot water and boil for about 5 minutes. Remove the shrimp heads and set aside.
- Beat 2 eggs in a bowl. Heat a little olive oil in a pan and pour in the eggs. Fry until both sides are golden and set.
- Push the fried egg to the side of the pan. Add peeled shrimp and cook in the remaining oil until they change color.
- Add the fried egg, shrimp, and mushrooms to the shrimp broth.
- Cover and boil over high heat for about 5 minutes.
- Add tofu, bring back to a boil, and cook for another 2 minutes.
- Finally, season with salt and pepper to taste.
- Sprinkle with chopped scallions and it's ready to enjoy!
