A delicious Tomato & Beef Chuck Roll Slices recipe.
Cut tomatoes into large chunks. Blanch the beef chuck roll slices in boiling water with scallions, ginger, and cooking wine. Drain and set aside.
Heat oil in a wok over high heat. Sauté minced garlic and ginger until fragrant. Add onion strips and tomato chunks, stir-fry over high heat until the tomatoes release their juice. Stir in ketchup. Add water and bring to a boil, then reduce heat and simmer for 5-8 minutes. Season with white sugar and light soy sauce.
Add the blanched beef slices to the simmering tomato broth. Gently stir and cook for 1 minute. Season with salt, sprinkle with chopped scallions, and serve.
