A delicious Whole-Cut Pork Jerky recipe.

Trim fresh pork leg of fat and membrane. Freeze slightly until firm for easier slicing. Cut into 3-5mm thick slices.
For 500g of meat, season with 2-3g salt (the original recipe called for 4g, but fish sauce and spices already add saltiness — reduced here to avoid an overly salty result), 5g fish sauce, 20g sugar, 0.5g baking soda, spices (black pepper or other seasonings) to taste, a pinch of red yeast rice powder, and 1-2g sesame oil. Marinate for 3 hours or overnight.
Dehydrate at 70°C for 3-4 hours. Flip or stir the slices after the first 30 minutes to prevent sticking to the rack. Dry until firm, adjusting time to your preference.
