A delicious Yeast-Risen Bubble Flatbread recipe.

Combine 500g flour with 5g instant yeast, 5g baking powder, 4g salt, 6g sugar, 1 egg, and 380g warm water (below 40°C).

Stir with chopsticks in one direction until the batter is smooth with no lumps. Add chopped scallions and continue stirring for about 3 minutes. Spray oil on the surface to prevent drying during proofing.

Let the dough proof until doubled in size, then stir to deflate. Spray oil on the surface, your hands, and the work surface before portioning the dough.

With oiled gloves, use the heel of your palm to scoop up the dough, pinch off a ball, and place it on the oiled work surface.

Spray oil on the surface and let proof for another 15 minutes until bubbles form on the surface.

With oiled gloves and spatula, transfer the dough rounds to a heated pan. Gently adjust the thickness and size with your hands — be careful not to pop the bubbles. Cover with a lid and pan-fry.
