Savory Potato and Chive Soup with Fish-Broth Flavor
Ingredients

- potato
- Chinese chives
- ginger
- dried baby shrimp (optional)
- vinegar
Instructions
- Wash and slice the potatoes. Cut the ginger into julienne strips and the fresh Chinese chives into sections.
- Add the julienned ginger and potato slices to the pan and stir-fry. Season with salt. Once the potatoes are just cooked through, add boiling water and light soy sauce, then simmer until the potatoes are tender and falling apart.
- When the potatoes are fully cooked, add the dried baby shrimp, Chinese chives, and a splash of vinegar.
