A delicious Shanghai Soft Egg Pancake — Classic Breakfast Staple recipe.


Place 150g flour in a bowl. First add 150ml water and stir until smooth with no lumps. Then gradually add another 50–70ml water to make a pourable batter, about the consistency of yogurt. Add 2g salt and mix well. Let the batter rest for about 15 minutes.

Lightly brush a flat pan with oil. Pour in a ladle of batter and tilt the pan to spread it into a thin pancake (you can also use a spreader to help).

Once the batter has set, crack an egg on top and spread it evenly. Sprinkle with chopped scallions.

When the egg has set, flip the pancake. Brush with about 20g sweet bean paste (tianmianjiang).
