A delicious Sizzling Iron Plate Beef recipe.
Thaw the beef naturally or over a water bath. Rinse once with clean water, discard any blood water, and pat dry with paper towels to absorb excess moisture. Add the seasonings directly to the beef: 2 tbsp light soy sauce, minced garlic from 3 single-clove garlic cloves, a generous amount of black pepper, 1/4 tsp salt, 1/4 tsp sugar, minced chili peppers (ideally a mix of red and green — no need to mince too finely), half an onion (roughly chopped), and cilantro cut into half-thumb-length pieces. You must include at least 3 cloves of garlic. Marinate for 10 minutes.
Heat a wok or iron skillet until very hot, then add cold oil. Stir-fry the marinated beef until cooked through. No additional seasoning is needed.
