Heat a little oil in a wok. Once hot, add scallion segments and ginger slices and stir until fragrant.





Add yellow rock sugar. Shanghai-style braised pork belly is rich, saucy, and on the sweeter side — adjust the sugar to your taste.


Once boiling, reduce to low heat and simmer for about 45 minutes, stirring occasionally.

After 45 minutes, turn the heat back up to reduce the sauce until thick and glossy, about 10–15 minutes.
