A delicious Spicy Stir-Fried Clams recipe.

Soak the clams in water with 1 teaspoon of salt and 1 teaspoon of oil. Let them sit to release any sand.



Pour cooking wine into a pot, add ginger slices and scallion sections, then add the clams. Cover and simmer over medium-low heat until all the clams have opened.


Heat oil in a wok. Add plenty of minced garlic, bird’s eye chili rings, and 1 tablespoon of doubanjiang. Stir-fry until fragrant.

Add the prepared clams and stir-fry over medium heat to coat evenly with the aromatics. Season with 1 tablespoon light soy sauce, 1/2 tablespoon dark soy sauce, 1 tablespoon oyster sauce, white pepper to taste, and 1/2 cup of water. Cook until the sauce has slightly reduced.

Before serving, sprinkle in the scallion sections and toss everything together well. Serve immediately.
