If you can’t handle much heat, use mild mixed peppers or bell peppers. Wash and cut the peppers into small rings, slice the garlic, and cut the cilantro into segments. Place everything in a bowl. Heat oil until smoking and pour it over the ingredients to release their aroma. Add steamed fish soy sauce, vinegar, sugar, and cooled boiled water. Let it pickle for about 15 minutes and it’s ready to eat — incredibly crisp and fresh! If you find the sauce a bit salty, toss in one or two century eggs cut into small pieces. That takes it to another level — it becomes a rice killer! You’ll easily polish off two bowls of rice!
