A delicious Thermomix Yu-Xiang Shrimp (Sichuan-Style Garlic Sauce Shrimp) recipe.

Place a bowl on the Thermomix lid. Weigh in 10 g light soy sauce, 15 g rice vinegar, 10 g caster sugar, and 5 g cornstarch. Remove and stir until smooth. Set aside as the sauce.

Place another bowl on the lid. Weigh in 250 g shrimp, a pinch of white pepper, and 10 g cooking wine. Remove and toss to marinate.

Wash the scallions. Cut the white parts into segments; finely chop the green parts for garnish.

Add the bird’s eye chilies (if using), garlic, and ginger to the Thermomix bowl. Chop for 5 seconds at speed 6.




Add the marinated shrimp. Cook for 3 minutes at 120 °C, reverse rotation, speed spoon.



The Thermomix will signal when done. Serve immediately and garnish with the chopped scallion greens.
