Classic Di San Xian (Three Earthly Treasures)
Ingredients
- 1 Chinese eggplant (long)
- 2 green pepper
- 2 potato
- 2 tbsp starch
- to taste salt
- 3 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sugar
Instructions
- Prepare the ingredients: 1 eggplant, 2 potatoes, 2 green peppers, 3 garlic cloves, light soy sauce, dark soy sauce, oyster sauce, salt, sugar, and starch.
- Cut the vegetables: peel potatoes and cut into irregular chunks. Cut eggplant into irregular chunks. Cut green peppers into small pieces.
- Coat eggplant with dry starch: add 1 tbsp starch to the cut eggplant and toss by hand until evenly coated. This reduces the amount of oil the eggplant absorbs.
- Deep fry: add plenty of oil to the wok. Fry eggplant for about 3 minutes, potatoes for about 5 minutes until golden, and green peppers for about 10 seconds.
- Prepare the sauce: in a small bowl, combine half bowl of water, 3 tbsp light soy sauce, 2 tbsp oyster sauce, 1 tbsp dark soy sauce, 1 tbsp sugar, 1 tbsp starch, and a pinch of salt.
- Heat a little oil in the wok, add garlic and sauté until fragrant. Pour in the sauce, then add the fried vegetables. Toss everything together thoroughly, then reduce the sauce over high heat.
