A delicious Braised Octopus recipe.
Clean the octopus thoroughly, cut it in half lengthwise — do not chop into small pieces.
Add water to cover the octopus, then add cooking wine, soy sauce, sugar, star anise, and bay leaves. Bring to a boil over high heat, then reduce to low and simmer for 20–40 minutes until the liquid has mostly cooked off. Slice and serve.
