Stir-fried Duck Gizzards with Garlic Scapes
Ingredients
- 1 garlic scapes
- 2 duck gizzards
- cooking wine
- garlic
- bird's eye chili
- ginger
- a little hotpot base
- salt
- light soy sauce
- dark soy sauce
- chicken bouillon
Instructions
- Prepare a bunch of garlic scapes and 2 duck gizzards (blanch the gizzards with some cooking wine before stir-frying). Also prepare garlic, bird's eye chili, ginger, and a small amount of hotpot base.
- Heat oil in a wok and add the aromatics (garlic, ginger, chili, hotpot base). Stir until fragrant.
- Add the blanched duck gizzards. Season with a pinch of salt and light soy sauce, then stir-fry. If the wok gets too dry, add a splash of water and continue stir-frying.
- Add the garlic scapes and continue stir-frying. If you prefer softer garlic scapes, cook them a bit longer.
- Done! Serve and enjoy.
