  • 4 Eggs
  • 1 Dried wood ear mushrooms
  • 2 Garlic cloves
  • 2 Fresh chili peppers (小米辣)
  • 1.5 Light soy sauce
  • 1 Oyster sauce
  • 1 Dark soy sauce
  • 1 Sugar
  • 1 Cornstarch
  • 1/4 Water

Instructions

  1. Prepare the ingredients: Soak the dried wood ear mushrooms until soft, then rinse and tear into small pieces. Beat the 4 eggs in a bowl. Cut the garlic scapes into sections. Mince the garlic and fresh chili peppers. Set aside.
  2. Mix all the sauce ingredients together in a bowl. The secret to this delicious dish is this savory umami-packed sauce!
  3. Heat oil in a wok or pan. When hot, pour in the beaten eggs and scramble until set. Remove and set aside.
  4. Add a little more oil to the pan. Add the minced garlic and chili peppers, stir-fry until fragrant.
  5. Add the wood ear mushrooms and garlic scapes to the pan. Stir-fry briefly, then pour a little water along the side of the pan. Cook for 2-3 minutes.
  6. Return the scrambled eggs to the pan.
