A delicious Chinese Egg and Chive Crepe-Style Pancakes recipe.



Stir until you have a smooth, pourable batter with no small lumps. Chop only the leaves of the chives.

Preheat an electric griddle on medium-high heat without oil. Pour in an appropriate amount of batter depending on the size of your griddle.

Quickly spread the batter evenly using a crepe spreader or scraper. The edges of the pancake will start to curl up.


Pierce the yolk and spread the egg evenly. Once the egg sets, drizzle cooking oil over the top.
