  • 2 potato
  • 2 tbsp starch

  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sugar

Instructions

  1. Prepare the ingredients: 1 eggplant, 2 potatoes, 2 green peppers, 3 garlic cloves, light soy sauce, dark soy sauce, oyster sauce, salt, sugar, and starch.
  2. Cut the vegetables: peel potatoes and cut into irregular chunks. Cut eggplant into irregular chunks. Cut green peppers into small pieces.
  3. Coat eggplant with dry starch: add 1 tbsp starch to the cut eggplant and toss by hand until evenly coated. This reduces the amount of oil the eggplant absorbs.
  4. Deep fry: add plenty of oil to the wok. Fry eggplant for about 3 minutes, potatoes for about 5 minutes until golden, and green peppers for about 10 seconds.
