Prepare all ingredients: wash and cut vegetables, slice meat if using, as shown in the reference image.

Heat oil in a wok over high heat. Add aromatics such as garlic, ginger, and scallions, then stir-fry until fragrant.

Add the protein (meat, chicken, or tofu) and sear until browned on all sides.

Add the vegetables, starting with heartier ones that take longer to cook, followed by quick-cooking greens.

Season with soy sauce, salt, sugar, and a splash of Shaoxing wine. Stir-fry until everything is well combined and cooked through.

Plate and serve immediately over steamed rice. Garnish with chopped scallions if desired.
