A delicious Hot and Sour Sweet Potato Noodles (Suan La Fen) recipe.

Prepare the base: Combine coarse chili flakes (1 tbsp), fine chili powder (1 tbsp), cumin powder (1/2 tsp), Sichuan peppercorn powder (1/2 tsp), minced garlic (1 clove), and white/black sesame seeds in a heatproof bowl.

Pour hot oil over the spices, then add salt, chicken bouillon, a pinch of white pepper, a pinch of sugar, soy sauce (1 tbsp), aged black vinegar (3 tbsp), white vinegar (1 tbsp), and premium soy sauce (1 tbsp). Stir to combine.


Just before draining, ladle about 2 spoonfuls of the hot noodle water into the sauce bowl. Drain the noodles and transfer to the bowl. Top with your choice of vegetables and garnish with fresh cilantro. Serve immediately.
