Place the chicken, cooking wine, ginger slices, salt, sugar, oyster sauce, and cornstarch in a bowl.

Shake vigorously to coat evenly, then refrigerate and marinate for 1 hour to let the flavors soak in.

Drizzle a little oil in the bowl, then add onion chunks, ginger slices, and garlic cloves.
