Mild Honey Pork Floss
Ingredients
- 500g Pork tenderloin
- 3 Ginger
- 3 Scallion
- 20g Light soy sauce
- 5g Oyster sauce
- 40g Olive oil
- 30g Honey
- 0.1g Monk fruit sweetener (or honey / sugar)
Instructions
- Cut the pork tenderloin into thick chunks. Blanch in boiling water, then add ginger and scallion. Cook using the rice function of a rice cooker, then let it simmer for another 2 hours.
- Drain and set aside.
- Roughly shred the meat and add the seasonings. This version is on the milder side — adding 1.5g of salt for regular flavor would still not be too salty.
- Using a stand mixer on speed 3 with the flat beater (K-paddle), mix for 1.5 minutes.
- Bake in a convection oven at 140°C for 5 minutes, flip, and bake for another 5 minutes.
- Beat with the stand mixer on speed 4 for 1.5 minutes, then repeat the previous baking step.
- Beat with the stand mixer on speed 4 for 1.5 minutes. Bake in the convection oven at 110°C, 4 minutes per side.
- If you don't have a stand mixer, shred the meat more finely by hand the first time. After the first bake, rub the meat apart by hand. Bake again, rub apart again, and bake a third time.
- Finally, add toasted white sesame seeds.
