A delicious Quick Breakfast: Fried Rice & Egg Drop Soup (Super Easy) recipe.

Gather all fried rice ingredients. Marinate the shrimp with oil and white pepper ahead of time. Prep the vegetables the night before so the morning cook takes under 10 minutes.

Heat oil in a wok, add the shrimp and stir until they change color. Pour in the beaten egg and stir until just barely set.

Add the ham, diced carrot, and diced celery. Stir-fry until just tender. (You can add a pinch of salt and soy sauce here for a base seasoning, or season everything together later.) Sneak in extra veggies for the kids — aim for a 1:1 veggie-to-rice ratio.

Add the cooked rice, break up any clumps by pressing with your spatula. Season with salt, light soy sauce, and white pepper to taste.


Take it off the heat after just a few seconds — you want the lettuce barely wilted, not soggy and watery.
