A delicious Stir-fried Chicken with Ginger, Scallion and Shiitake Mushrooms recipe.
Pat the chicken dry. Season with salt, marinate with cornstarch, then coat with peanut oil to seal in moisture. Let marinate for about 10 minutes.
Heat a pan with cold oil. Add the marinated chicken and pan-fry until lightly golden and fragrant before flipping. Add rice wine and chicken bouillon.
In the rendered chicken fat, sauté whole garlic cloves, scallion whites, and ginger slices until fragrant. Add the pre-soaked dried shiitake mushrooms and stir-fry. Pour in soy sauce and continue stir-frying.
When nearly cooked through, add oyster sauce, sugar, and white pepper. Toss in chopped scallion greens just before serving.
