Slice the pork tenderloin or belly into small pieces. Deseed the chili peppers and slice them into similar-sized pieces. Marinate the meat: light soy sauce (2 tbsp) + dark soy sauce (½ tbsp) + salt (½ tsp) + cornstarch (1 tbsp) + water (2 tbsp) + cooking oil (1 tbsp). Mix well to coat evenly and lock in moisture.
