Trim the tips of the Indian lettuce and cut into sections from the root end toward the leaf end.

Cut the canned dace fillets into bite-sized pieces.

Prepare the fermented black beans, dace pieces, diced garlic, and minced ginger.

Blanch the Indian lettuce: heat the wok, add a small amount of cold oil, toss in the lettuce, stir-fry, and sprinkle a little water around the edges of the wok to prevent burning.

Fry the diced garlic in oil until fragrant, then remove and set aside.

Add ginger, fermented black beans, and all other prepared ingredients to the wok and stir-fry until fragrant.

Add the blanched lettuce back to the wok and stir-fry to combine evenly. Season with salt, sprinkle evenly, add MSG and sugar, drizzle soy sauce around the wok edges, stir-fry, taste and adjust, then plate and serve.
