Cilantro Beef Stir-fry
Ingredients
- 200g beef
- a handful cilantro (coriander)
- garlic
- ginger
- red chili pepper
- 2 tbsp cornstarch
- 1 tbsp cooking wine
- 2–3 tbsp light soy sauce
- 1 tbsp dark soy sauce
- black pepper
- sugar
- Sichuan pepper powder
- cumin powder
Instructions
- Cut the beef into strips or thin slices. Add light soy sauce, dark soy sauce, a pinch of sugar, cracked black pepper, cumin powder, Sichuan pepper powder, cornstarch, and a drizzle of oil. Mix well and marinate for a while.
- Cut the ginger into julienne strips; mince the garlic and red chili pepper. Set aside.
- Wash the cilantro and cut into sections.
- Heat oil in a wok. Optionally toss in a few Sichuan peppercorns to bloom, then remove and discard. Add the julienned ginger, minced garlic, and chili; stir-fry until fragrant.
- If you like, add a pinch of cumin to bloom in the oil. Slide in the marinated beef and stir-fry quickly until it changes color. Splash in the cooking wine for aroma.
- Once the beef is no longer pink, add the cilantro and a pinch of chicken bouillon. Toss quickly for a few seconds—do not overcook.
- Transfer to a plate and serve.
