| button mushrooms | about a dozen (adjust to serving size) |
| shrimp paste | 1 bag |
| light soy sauce | 1 tbsp |
| dark soy sauce | ½ tbsp |
| oyster sauce | a dash |
| sugar | a pinch |

Remove the stems from the button mushrooms and wash them. Squeeze shrimp paste into the mushroom caps.

Mix light soy sauce, dark soy sauce, oyster sauce, and sugar with some water to make the sauce. (Add a little salt if you prefer it saltier.)

Place the mushrooms shrimp-side down in the pan and pan-fry.

Flip and fry the other side.

Pan-fry until both sides are golden brown.

Pour in the sauce.

Cover with a lid and braise for about 3 minutes.

Garnish with chopped scallions and white sesame seeds.

Plate and serve.
