Techniques you'll use
- Aromatic blooming (bao xiang) ↗
Bloom ginger, garlic, and chili in hot oil to build the aroma base.
- Stir-frying ↗
Cook small pieces in stages, then bring them together while their textures are distinct.
- Simmering (dun) ↗
Gentle low-heat cooking in liquid until flavors merge and meat softens.
- Starch thickening (gou qian) ↗
Thicken sauce so it clings to every piece.
Steps
Dice the shiitake mushrooms and potatoes, and cut the chili peppers into sections. Heat oil in a wok or large skillet, sauté chopped green onion and ginger until fragrant. Add the ground pork and stir-fry until it changes color. Pour in 1 tablespoon of cooking wine and stir, then add the diced mushrooms and potatoes, stirring to combine evenly.
✅ Done when: The pork turns from pink to opaque white.

Add 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, 2 tablespoons of oyster sauce, half a tablespoon each of salt and sugar, and a pinch of pepper. Stir-fry until colored, then add a bowl of warm water and cook for a few minutes. Add the chili peppers and drizzle in a cornstarch slurry, stirring until the sauce thickens.
✅ Done when: The sauce becomes thick and glossy.
If The sauce stays thin and pools at the bottom instead of coating the mix.:
