Prepare two sauces: For the starch slurry, mix 1 tbsp potato starch with about half a bowl of water (don’t skip the water!). For the oyster sauce dressing, mix 2 tbsp soy sauce, 1 tbsp oyster sauce, half tbsp sugar, and some water in a bowl.
Mince the garlic and set aside.

Cut off the root of the lettuce. Blanch in boiling water with a small amount of oil and salt. Blanch for about 20 seconds, then remove and arrange on a plate.

Heat oil in a pan over low heat, add minced garlic and sauté until fragrant. Be careful not to use high heat or the garlic will burn.

Once garlic is fragrant, add the oyster sauce dressing and stir to combine.

Add the starch slurry and stir until the sauce thickens. If the sauce is too thin, continue heating; if too thick, add more water. Taste and adjust seasoning as needed.

Finish by adding a few drops of sesame oil.

Pour the sauce over the arranged lettuce and serve immediately.
