Cut green peppers into short sections. Stuff enoki mushrooms inside the pepper rings. Prepare the sauce: mix minced garlic + chopped bird’s eye chilies (0.5 tbsp) + dark soy sauce (1 tbsp) + light soy sauce (1 tbsp) + oyster sauce (1 tbsp) + sugar (0.5 tbsp) + salt (0.5 tbsp) + cornstarch (1 tbsp) + water (as needed).

Heat oil in a pan and fry the stuffed peppers until the skins blister and turn golden-brown (tiger-skin pattern).

Pour the prepared sauce into the pan, cover with a lid, and simmer until the sauce thickens. Serve immediately.
