Stir-Fried Green Beans with Beef Cubes
Ingredients
- 250 beef
- 5-6 long beans (yardlong beans)
- 1 green bell pepper
- 1-2 each green and red bird's eye chilies
- 1/4 onion
- to taste minced garlic
- to taste pickled vegetables (paocai)
- a little sweet potato starch
- 1 doubanjiang (spicy bean paste)
- 1 light soy sauce
- 1/2 dark soy sauce
- a little sesame oil
- to taste oyster sauce
- to taste salt
Instructions
- Prepare ingredients as shown: hand-cut beef into small cubes, dice long beans, onion, green pepper, and chilies into small pieces.
- Place cut beef in a bowl. Add a little sweet potato starch, doubanjiang, 1 tbsp light soy sauce, and 1/2 tbsp dark soy sauce. Mix well, then add a little sesame oil.
- Heat oil until 60% hot (about 180°C/350°F). Add beef cubes and stir-fry until they change color. Remove and set aside.
- Add minced garlic, green pepper, bird's eye chilies, and pickled vegetables. Stir-fry briefly, then add long bean cubes. Stir-fry for about 3 minutes, then add onion cubes. Add appropriate amount of oyster sauce. Cook until beans are tender-crisp (you can add a little water to ensure the beans are fully cooked).
- Add the beef cubes from step 3 back to the pan. Stir-fry together. Taste for seasoning; if too bland, add more oyster sauce and salt. Remove from heat and serve with a big bowl of rice.
- Kid-friendly non-spicy version: Skip the chilies in step 4, everything else remains the same.
