Ingredients

  • 1 garlic
  • 1 onion
  • 1 ginger
  • 1 scallions
  • 20g light soy sauce
  • 10g dark soy sauce
  • 15g oyster sauce
  • 15g cooking wine
  • a little salt
  • 5g sugar
  • a little pepper
  • 5g starch
  • 15g cooking oil

Instructions

  1. Prepare all the ingredients.
  2. Clean the sea bass, split it in half with a knife, and cut the fish into evenly spaced pieces.
  3. Place the fish pieces in a container, add scallion, ginger, cooking wine, light soy sauce, dark soy sauce, oyster sauce, salt, sugar, and pepper. Mix well, then add 1 spoon of starch.
  4. Mix well and marinate for 30 minutes.
  5. Cut the onion into chunks; peel the garlic, slice the ginger, and chop the scallions and bird's eye chili.
  6. Add cooking oil to the clay pot, add garlic cloves, ginger slices, and onion. Stir-fry until fragrant. Use plenty of garlic and onion — enough to cover the bottom of the pot.
  7. Place the marinated fish pieces on top, pouring in the marinade as well.
